In India and Papua New Guinea, where sugar cane originated, early man sucked the sweet juice from the cane.Flavored sugar water and other ingredients (cream of tartar, citric acid, food color, etc.) is heated and cooled in different ways to produce different types of candy. The basic definition of candy is a flavored sugar, honey or syrup. Sweet substances (sugar, honey, agave, etc.) don’t become candy until they are transformed into something more. In addition to eating the honey, they took the next step to make candy from it, by drying it into a taffy-like substance. A cave picture from Spain, dated to about 6000 B.C.E., shows a man scooping honey from a beehive. The history of candy dates back to cavemen. Well: Our species evolved with a built-in sweet tooth.
